Potato Soup

Ingredients

6 potatoes, peeled and cubed2 leeks, chopped2 onions, chopped1 rib celery, sliced4 chicken bouillon cubes1 tbsp. dried parsley flakes5 cups waterpepper and salt to taste3 tbsp. light, soft tub margarine12-oz. can fat-free evaporated milkchopped chives
This makes 10 servings(ideal slow cooker size: 4-quart)
1. Combine all ingredients except milk and chives in slow cooker.
2. Cover. Cook on LOW 10-12 hours, or HIGH 3-4 hours. Stir in milk during last hour.
3. If desired, mash potatoes before serving.
4. Garnish with chives.
Sometimes I like to garnish mine with a little fat free cheddar cheese or sometimes for a nice treat, real bacon pieces :)
Serve with a fresh garden salad and you've got a nice comforting fall or winter meal. Enjoy!
