1 cup brown rice 1 tbsp olive Oil1 small Onions4 cloves Garlic1 tbspn apple cider Vinegar1 tspnCayenne more for spicy less for less spicy1 tspn Cumin 1 can black black beans half cup diced tomatoes half cup diced cucumbersOptions - i like to take my slap chop half an onion half a tomatoe and a handful of cilantro to make a homemade salsa and a jalepeno if i feel like spicy. Sliced avacado or some shredded lowfat chedder cheese is tasty too but adds lots of fat and calories!
1. Cook brown rice according to package directions
2. In large frying pan Saute Oil, Onions, Garlic, Vinegar, Cayenne, and Cumin for five minutes
3. With a handheld mixer stick or blender, blend black beans to about 70% mashed - more or less is about consistency preference
4. Add beans to frying pan mixture cooking till heated
5. To make bowls - first layer rice - second layer black beans - third layer diced tomatoes and cucumbers
