Taco Salad Casserole

Ingredients
1 LB extra lean ground beef1 can black beans (drained)1 can pinto beans (drained)1 can 98% Fat Free Cream of Mushroom Soup1 pkg taco seasoning mix2 cups lettuce (shredded)4 roma tomato (diced)4 oz cheddar cheese (shredded)1 bag baked tortilla chips (crushed)1 cup salsa1 can corn (drained)
Directions
Brown ground beef, drain. Add all ingrdients to beef, except cheese, lettuce, tomato, and chips. Remove from heat and add crushed tortilla chips. Stir until all chips are moist. Pour into casserole dish and bake for 30 min @ 375'. Top with cheddar cheese. Allow cheese to melt. Serve topped with shredded lettuce and tomato. Delicious!

    oh my god this was amazing! I added a can of green chilies to make it super extra spicy and it was fabulous! I'm going to have to use some hardcore will power to keep myself away from the pan! This was a filling meal for sure! and low enough in calories that I can have dessert too :) - 11/11/09

    This was awesome! Super easy to put together and didn't take long to make at all. Like some of the others, I served with a tblspn of fat free sour cream and piled on the lettuce and tomato. I froze the rest into individual portions for quick and easy lunches and dinners. - 2/27/13

    I omitted the corn. I added rotel instead of salsa. I also added a medium bag of doritos instead of baked tortilla chips. I topped with avocado which made it very creamy instead of using light sour cream like i would normally do. Extremely satisfying! - 2/9/13
