Gluten Free/Sugar Free Pumpkin Pie

16 oz can pumpkin1 c water, 2 Tb cold water, 1/4 c hot water2/3 c better than milk soy powder1/2 c pamela/s baking mix1/2 tsp stevia1 1/2 tsp pumpkin pie spice2 tsp vanilla1 packet knox gelain 2 tsp ener-egg
Sprinkle packet of gelatin on 2 Tb cold water--set aside until thick.
Put remaining ingredients (except 1/4 c hot water) in a large bowl and blend for 1-2 minutes until mixed throughly.
Pour hot water over gelatin--stir to dissovle. Add to bowl and blend again until throughly mixed.
Spray a glass pie pan, and pour mixture into pan. Microwave on 50-60% power for 20-30 minutes, until middle is firm. Let stand 15 minutes. Serve warm or allow to cool. Can be topped with whipped cream if desired.
Makes 1 pie. Serving sizes is 1/12th of the pie.
