Quick & Lean Chicken Mushroom Stroganoff

Ingredients
1 lb. boneless, skinless chicken breasts or thighs - thinly sliced12 oz mushrooms, sliced (about 3.5 cups)1/2 cup reduced fat sour cream1/4 cup chicken broth (low sodium)2 tbsp chopped fresh dill or 2 tsp dried1 tsp salt 1/4 tsp ground black pepper (or to taste)
Directions
Cut chicken in small bite-sized slices.
In a large nonstick skillet over medium heat, heat 1 tsp of oil.
Add chicken and cook until golden brown and cooked through. Remove chicken, cover to keep warm.
In the same skillet, heat the remaining oil, add mushrooms and onion.
Cook, stirring constantly, until tender, about 5 minutes. Reduce heat to low, stir in sour cream, chicken broth and spices (to taste). Add reserved chicken, cook until heated through, about 5 minutes.
Serve over whole wheat wide noodles or rice noodles.
Tip: You can omit the oil completely in this recipe by using cooking spray or lemon juice & broth (about 1 tbsp of each).
This reduces the amount of fat without sacrificing flavor!!

    Note to DIETINGAL. Yes, it appears she left Onions off the ingredients list, but I found something. If you click on "Ingredients Details" under the nutrition info, it lists the onions and calls for 1 cup. Just an fyi :0) - 5/5/09

    this was a very easy and nice treat for a left over chicken breast. I just started with 1/2 the mushrooms and onions (I guessed a small amount, the recipe doesn't state how much onion). After I added the sour cream and broth I put in my cooked, chopped chicken breast. It was still very good. - 1/25/09

    Great recipe, used no oil and saut�ed garlic, Chilli paste and ginger first before the chicken. Also used cottage cheese -low fat- blended with the stock before adding the vege. Also added celery and corn :) - 2/5/14

    1 cup of onions...and I never use the extra salt...I like everything without added salt...glad you like the recipe!

    Very good recipe though I had to doctor up the spices a bit. I added 1 tsp no salt seasoning and 1 tsp more garlic powder. The dill makes this dish, if you don't have fresh use dried. As another reviewer mentioned the amount of chopped onion is 1 cup. Very good will make again. - 6/28/11

    Yummy. Added a little more chicken broth when sauteeing the chicken and did the same when sauteeing the onion (which I put in first) and then added the mushrooms. Left out extra salt and didn't use the chicken broth forthe sauce. Would add more dill (dried) and granulated garlic next time. - 2/18/11

    I did cut the dill in half and added garlic powder when cooking the chicken.

    We loved this! I embellished a little with my spices while I was cooking the chicken adding in some chopped fresh garlic and some poultry seasonings. I also used about 3/4 cup chopped onion (guessed since the recipe omitted the amount) I think it was a good amount. - 3/12/09
