Hearty Tequila Chicken Soup

1 small onion, cut into 8 wedges1 cup frozen corn, thawed14-oz. can diced tomatoes with mild green chilies, undrained(we used tomatoes w/jalapenos)2 cloves of garlic, minced2 T. chopped fresh cilantro1 whole fryer chicken (about 3 pounds)2 c. chicken broth3 T. tequilaSour cream
Line bottom of crock pot with onions. Add corn, tomatoes with green chilies, and garlic and 2 T. of cilantro. Mix well to combine. Place chicken on top of tomato mixture. COmbine broth and tequila in medium bowl. Pour over chicken and tomato mixture. Cover and cook on 8 - 10 hours. Transfer chicken to cutting board. Remove skin and bones. Pull meat apart with two forks into bite-size pieces. Return chicken to crock pot and stir. Serve with a dollop or sour cream and garnish with cilantro.
