potato pancakes

Ingredients
1 egg1/2 med. onion grated1 TBSP all purpose flour1/8 to 1/4 tsp salt1/8 tsp pepper1/8 tsp baking powder2 med (1 1/2 lbs.) potatoes, peeled and cubed1 TBSP parsley chopped1-2 TBSP canola oil
Directions
In blender or food processor, place egg,onion, flour, salt, baking powder and 1/2 cup potatoes. cover and process on high until smooth. Add prasley and remaining potatoes, cover and pulse 2 to 4 times until potatoes are chopped. Pour 1/2 of oil onto hot griddle or skillet. Pour batter by 1.3 cupful onto griddle, flatten slightly to 4 to 5" diameter. Cook over medium heat until golden brown on both sides. add oil as needed until all pancakes are cooked
