Low Fat Whole Wheat Fruitcake

* *Rum, 4 fl oz * Fruit juice, 4 oz * Pears, dried, .25 cup, chopped * Prunes, dried, .25 cup, pitted and chopped * Apples, dried, .25 cup chopped * Raisins, 1 cup (not packed) * Dates, 0.5 cup, pitted, chopped * Apricots, dried, .25 cup, chopped * Apple Sauce, 2 tablespoons * Pecans, .25 cup, chopped * Walnuts, .25 cup, chopped * Salt, .5 tsp * Whole Wheat Flour, 1.5 cup * Baking Soda, .75 tsp * Ginger, ground, .5 tsp * Cinnamon, ground, 1 tsp * Cloves, ground, .25 tsp * Nutmeg, ground, .25 tsp **The rum can be replaced with all juice or even tea, coffee or water. Its difficult to find dried fruits that have no added sugars, but they are out there. Choose organics with no added sulfates or sulfides when you can.
1. In a medium mixing bowl, combine fruit, rum, juice, sugar, applesauce and salt. Refrigerate over night.
2. Preheat oven to 350 degrees F (175 degrees C). Grease one 5x9 inch loaf pan.
3. Sift together the flour, soda, ginger and cinnamon. Stir into the fruit mixture.
4. Add the nuts. The dough will look dry; don't add water or it will become too wet as it cooks. (I made this mistake once.)
5. Pour into loaf pan and bake for 1 hour or drop by the teaspoon on a greased cookie sheet and bake for 15 minutes.
Slice the loaf into six thick slices and then slice in half. Each serving is half a slice.
