Green Bean Soup

8 c water3-4 medium peeled and diced potatoes1/4 onion, chopped3 cans green beans (Do NOT drain)1 1/2 c and 3 T flour2 eggs2 tsp and 1/2 tsp salt1/4 c oleo1 c cream (I use half n half)2 buillion cubes
Put beans, potatoes, onions, 2 tsp salt, chicken buillion cubes and water in a kettle. Bring to a boil and boil until potatoes are just tender, not mushy. Make the dumplings, using 1 1/2 c flour, 2 eggs, 1/2 tsp salt, and enough water to make a sticky dough. Add these dumplings 3/4 tsp at a time, when they float to the top, reduce heat. Brown 3 T flour in 1/4 cup oleo in a small skillet or microwave. Add this to the soup. Stir so it will not get lumpy. Add a cup of cream. Serve. This recipe makes 10 1 cup servings
