Cook rice according to directions. Meanwhile chop the carrots, onions, and celery and cook in some of the chicken broth. While all that cooks. Cut up about 6 oz chicken left over from another meal. After the veggies are done add the cooked rice, the chicken and the evaporated milk. Let heat thoroughly and enjoy. Make 4 11/4 cup servings.
