3 lbs beef chuck, cut into small cubes3 large onions, coarsely chopped2 Tbs vegetable oil1/2 cup plain (all-purpose) flour1 can (10.5 oz) undiluted beef broth, consomme or bouillon6 Tbs chili powder1 tsp salt1 tsp ground cumin1.5 tsp ground oreganoshredded cheese of your choice
Makes four hearty 1.5 cup servings.
Brown beef and onions in oil. Add flour slowly while stirring. Cook two minutes over medium heat, stirring constantly.
Add broth, spices and seasonings, cover and simmer for 30 minutes, stirring occasionally. Top each serving with shredded cheese, if desired. Can be served over rice, but then it's not low-carb.
