160g (1-1/3 cups) whole wheat flour45g (1/2 cup) ground flax seed220g (2 cups) oat bran2 tsp. baking powder2 tsp. baking soda2 tsp. cinnamon1 tsp. salt125g (2/3 cup) sucanat or brown sugar500g (2 cups) mashed banana2 eggs 2 tsp. vanilla2 T. coconut oil1 cup buttermilk1/2 cup applesauce160g (1 cup) raisins, plumped in hot water
In a medium sized bowl, combine all the dry ingredients. In a large bowl mix together all the wet. Pour the dry into the wet and just barely mix. Add the raisins and finished gently mixing just until combined. Divide into 24 greased muffin cups. Bake at 400 for about 18 minutes or until done. Makes 24 muffins.
