Peanut Noodles with Edamame

Ingredients
8 oz barilla plus thin spaghetti, cooked1/2 cup shelled cooked edamame1 T sesame oil2 tsp minced fresh ginger root2T natural peanut butter1 T cider vinegar1 tsp brown sugar1/4 cup hot water1/4 cup reduced sodium soy sauce1 T thai chili sauce1/4 cup chopped fresh cilantro1 cup chopped raw carrots
Directions
Serves 4 as a main dish.
Cook pasta and edamame to package directions. Drain and set aside. Heat sesame oil and cook ginger for 2 minutes on med-low. Add peanut butter, vinegar, water, chili sauce, brown sugar and soy sauce; stir until smooth. Toss noodles, edamame, sauce, carrots, and cilantro. Chill & serve or serve warm.
