Spinach Sauce

Ingredients
2 (16oz) Bags of baby spinach.25 oz flour3 Tbsp Butter/MargarineMaggi (to taste)Salt (to taste).5 to .75 oz Water.25 Cup Sargento Fancy 4 Cheese Mexican or other shredded cheese.
Directions
Prep items needed, pot for boiling, a colander, food processor/blender, sauce pot for making the sauce, whisk, rubber spatula.

Blanche spinach (add to boiling water and remove within a minute or so then remove the spinach and rinse in cool water immediately) do not save any water from the spinach. Drain the spinach fully, it will be rather flaccid from being boiled.
Add the spinach to a food processor or blender, blend it until the consistency is like a thick sauce. Save the spinach to the side.

In sauce pot, melt the butter on a medium low heat, slowly sprinkle in the flour using a whisk to stir it in until you create a rather thick looking sauce, then slowly mix in the water, stirring constantly. Add the cheese, continue mixing, add in the spinach, finally mix in the Maggi and salt to taste. When you have the flavor you like you should have a relatively gravy like sauce you can use over other foods like a gravy or as a side dish. My kids eat it as a side with scrambled eggs for dinner, I prefer it over mashed potatoes.
