4.5 ounces chicken breast, pounded thin1 Laughing Cow Light wedge~15g spinach1 garlic cloveSprinkling of paprika
Pound chicken breast thin with meat mallet or rolling pin. Try to keep breast as in tact as possible.
Spread breast with wedge of Laughing Cow. Press garlic clove through garlic press and spread on top of Laughing Cow. Layer spinach on top of spread layer. Roll chicken breast up, securing with skewers or toothpicks.
Cook in oven ~350 until done (~25 minutes). Sprinkle with paprika.
