Pumpkin Pudding

1-15 ounce can pumpkin1 cup nonfat milk1/3 cup Splenda or light brown sugar3 egg whites1/2 T cinnamon or pumpkin pie spice
Combine all ingredients in a bowl and whisk together until blended. Spray an 8x8 inch pan with cooking spray. (you can also use a pie pan or custard cups) Bake at 425 degrees for 15 minutes and then lower the oven temperature to 350 and continue baking 40-50 minutes. Cut into 4 equal servings. Serve cold for breakfast or anytime. I like this with 1/4 cup oatmeal.
