Chicken Cordon Bleu

Ingredients
Olive Oil, 1tsp Chicken Breast, no skin, 675 grams Swiss Cheese - Light (Ziggy's Brand), 4 slicesZiggy's -Black Forest Ham Extra Lean 4 slices Butter, salted,1 tspRice flour, white, 2tbsp Paprika, 1 tbsp White Wine, 4 fl oz Chicken Broth, 1 cup (8 fl oz) Half and Half Cream, .5 cup Milk, 1%, .25 cup
Directions
butterfly chicken breasts lay cheese and ham on breasts and rolls up and secure with totthpick. Heat 1 tsp olive oil and 1 tsp butter in fry pan. on wax paper combine paprika and rice flour and lightly coat chicken rolls. brown in hot oil/butter. remove to plate add wine and broth to pan to deglaze return chicken to pan and simmer 25 minutes turning occassionally. remove chicken again. whisk in milk and cream return chicken to the pan and simmer 5 more minutes until chicken has reached internal temp of 170F.
