4 med. eggs.5 cup or 4oz. part skimmed mozza-cheddar cheese2Tb. butter(unsalted)1 tsp salt as desired1 1/2 cups chopped spinach1/2 cup whole wheat flour2 oz minny cooked shrimp ( may exchange for bacon or other left over meat)1 1/2 cups 1% milk.25 cup finely chopped onion
Serves 6
The shrimp may be exchanged for bacon or other meat and any other vegetables of choice may be added. Adjust calories accordingly.
Preheat oven 350. Place cheese and meat in bottom of a 9" greased pan. Beat eggs, butter, onion, salt, flour and milk until smoothn then pour into pan. Bake for 35 min. until set. Serve hot or cold.
