Ricotta Romanoff Sundae

Ingredients
2 cups quartered strawberries1 tbsp grated orange peel3 tbsp sugar substitute1-1/4 cups sliced strawberries4 cups part-skim ricotta2 tbsp pistachiosMint leaves, for garnish
Directions
In a blender or food processor, combine quartered strawberries, orange peel, and sugar substitute and blend until smooth. Pour into a large bowl. Gently stir in the sliced strawberries, cover and chill.

When ready to serve, evenly divide the ricotta among 4 serving dishes. Pour equal amounts of the strawberry mixture over the ricotta, then sprinkle with the pistachios. Garnish with mint leaves.
