1/2 cup milk (Archer Farms Skim Milk)2 tablespoons butter (Fleischmann's Olive Oil Spread w/ Sea Salt)1 tablespoon cornstarch1/2 tablespoon White Wine Vinegar1/4 cup Egg Beaters Original (recipes typically call for 1 egg yolk, but this saves you on cholesterol)dash of cayenne pepper, black pepper, paprika
Makes about 6 2-tablespoon servings.
Cook milk, cornstarch, and butter in a saucepan on low heat for about 3-5 minutes, until butter is melted and sauce thickens a little. Stir in egg beaters and vinegar and continue to cook for another minute or two. Pour over eggs (or veggies, or other foods), then lightly season with cayenne pepper, black pepper, and paprika.
