(94)
  • Number of Servings: 1
Ingredients
  • 2 tablespoons margarine
  • 1/2 cup chopped onion
  • 3/4 cup chopped celery
  • 2 – 10 oz. packages frozen broccoli – thawed enough to separate
  • 2 cups chicken broth (fat free)
  • 1 cup nonfat milk
  • 1/2 lb. processed reduced fat cheese, cubed (Velveeta)
  • salt and pepper to taste
Directions
1. In medium saucepan, heat the margarine. Add onion, celery and cook until wilted.

2. Add broccoli and broth. Quickly bring to a boil. Cover and simmer until broccoli is tender, about 5 minutes.

3.Puree in blender (will need to do in two batches).

4. In the saucepan, stir together the broccoli puree, milk and cheese. Add salt and pepper to taste, and then heat. If the soup is thicker than you like, add more broth or milk and re-season.

It was wonderful. Hubby will only eat velvetta! How can people be so rude to give low ratings when they have changed the original recipe so much it is not the same. No wonder they did not like it. Be nice folks, taste is subjective and what you have grown used too. - 2/1/09

I used some of the suggestions from previous posts. Instead of the margarine, I used a half-tablespoon of vegetable oil and Fat Free/Less Sodium Chicken broth. Everyone enjoyed the soup. The thing I will change next time is not to completely puree the broccoli, I would like some texture. - 2/3/09

I think it's important we all keep in mind that the presentation of a recipe that includes margarine and processed cheese on SP does not mean that SP advocates a diet full of these foods. These things are fine in very lmtd quantities--might we think of this as an "occasional" instead of "staple"? - 1/26/09

I love soups/stews, and while I love broccoli and cheese, I never have cared for broccoli soup...until now! I loved this soup, it is easy to make and wonderful to eat. - 1/29/09

I tried this last night, and I thought it was very good. I didn't find this type of Velveeta (low fat) so I used other processed fat-free cheese and canola oil rather than margarine. I might add some hot sauce next time to spice it up a little. But, It is quite good. - 1/27/09

I made this recipe last night it was pretty good, but I think it needs a little more flavor. I did not use the margarine and instead of just the frozen broccoli I used the lowfat green giant broccoli and cheese, I also did not use the velveeta I just used reduced fat colby and cheddar. - 1/27/09

I would rate this as good only because I like my soup to be thicker. I made the soup today for my FIL and added 2 cloves of garlic, and made a roux w/ flour and the nonfat milk. I also don't think you need to use all that Velveeta, as I only used half and you still have a nice cheesy flavor. - 1/26/09

    I loved it! - 1/26/09

FAmily loved it. Hubby said it was better than it looks. Reminded him of the look of pea soup. I replaced the margarine with baking spray, used reduced sodium chicken broth. Next time I would keep some broccoli out of the the blender to add some texture. - 1/27/08

I made this for me and my parents and substituted the velveeta for sharp cheddar, which didn't melt quite as smoothly, but the soup itself was delicious. I think that next time I'll make a creamy cheese sauce first and just add that to the pureed broccoli part. - 1/26/09

I love this soup. It's very filling. I add a splash of lemon when I cook the broccoli and it gives it a whole new flavor! - 1/26/09

I didn't use the margarine but did use low sodium broth and cut the cheese down to 6 oz. I also added garlic and other spices like onion salt. It was good, but I think the sodium in this meal it a little too much for me. - 2/4/08

I made this with the following tweaks: removed about 1/2 of broccoli before pureeing in pot with immersible hand blender. Then added 2 cooked (microwave) boneless, skinless chicken breasts chopped bite-size. Had to thicken with 2 tablespoons cornstarch because I mistakenly usedtwo cans of broth. - 2/2/08

I tried yesterday night and I liked a lot. I substituted velveta cheese for light philadelphia and used as a sauce for a whole wheat pasta dish. It was great I will try it again. - 2/1/08
