Ingredients
ortega taco seasoning packet Cod (fish), 28 ozOnions, raw, 1 large Cauliflower, raw, 1 cup Zucchini, 1 cup, slicedCheddar Cheese, 3 cup, diced Beans, black, 3.5 cupOrtega Enchilada Sauce, 8.25 cupMozzarella Cheese, part skim milk, 8 oz Corn Tortillas, 26 tortilla, medium
Directions
Sprinkle the fish with some of the taco seasoning and cook on the stove top and crumble to .5 inch size pieces. Chop the onions with the other vegetables and cook on the stove with the remainder of the taco seasoning. Mix together the fish, onion vegetable mix, 1/2 the cheese and the beans in a large bowl. Pour enough enchilada sauce in the baking pans to cover the bottom. Heat the tortillas so they are soft, and place a small amount of the fish mixture inside, roll up and place in the baking dish. Continue until you run out of tortillas. If there is any filling leftover just place it on top of the enchiladas. Pour remaining enchilada sauce over top and sprinkle with remaining cheese. Bake in the oven until cheese is melted. Makes 13 servings of two enchiladas each.
