Busy Mom's Black Beans with a KICK!

Ingredients
2 cans (15.5 OZ) Black Beans1 can (14.5 OZ) Diced Tomatoes & Green Chilies (Compare to Ro-Tel)3-5 cloves garlic, minced or pressed
Directions
If you have a stick blender, place Diced Tomatoes & Green Chilies along with the garlic in sauce pot before adding the Black Beans. Blend tomatoes and garlic by pulsing them until slightly chunky... if you don't mind the chuncks... don't blend it at all!!!! Add the Black Beans and bring to a simmer for 20 minutes until the flavors meld.

Makes about 10 half cup servings... of course a half cup never seems like enough!

Serve with brown rice, tortillas, fajita veggies or you can add a bit of sour cream or greek yogurt and enjoy it as a soup!!!
