Okra, tofu & tomato mixture

Ingredients
1/2 large Onions sliced 3 cloves garlic, chopped1 small hot chilil pepper, diced2 TBS curry powder (more or less to taste)1 - 15 oz can whole Tomatoes, and juice2 cups WHOLE Okra1 block firm Tofu1 red bell pepper, thinly sliced 1 TBS olive oil
Directions
In large skillet add olive oil, sliced onions, garlic, chili pepper. Cook until onion is soft. Add 1 TBS curry powder, mix well.

Add canned tomatos and and stir, scraping pan well

Add okra and bell pepper, mix well then add tofu and mix gently. Simmer about 15-20 minutes or until okra is done.

Makes about 4 - 1 1/2 cup servings
