Lydia's Chili

Ingredients
1 tbsp canola oil2 med-lg onions, chopped2 lbs ground beef1 tsp black pepper2-1/2 tbsp chili powder1/4-1/2 tsp. crushed red pepper2 tsp cumin1 tsp oregano1 tsp garlic powder1 15 oz can mexican tomatoes1 15 oz can diced tomatoes1 8 oz can salt-free tomato sauce1 15 oz can corn, drained1 15 oz can kidney beans, rinsed
Directions
Saute onions in oil until brown and soft – set aside.

Brown ground beef and drain.

Add spices and stir for 2 minutes.

Add remaining ingredients and simmer 2- 2-1/2 hrs.

Makes eight 1 cup servings.
