easy ham risotto

Ingredients
1 cup brown rice2.5 cups low sodium chicken broth1 cup healthy request chicken/mushroom souponioncelerymushroom2 slices spiral cut ham2 oz firm tofu
Directions
cook the rice in 2 cups of broth.
once cooked add the soup and the remaining broth. allow to simmer while preparing the rest.
chop up the celery, onion, and mushroom and then saute in a non stick pan, or with a small amount of pam spray.
when softened add to rice.
repeat step with the ham and tofu.
allow to simmer for 5-10 mins.
enjoy!
