Sweet Leaf Apple Crsip

8 c chopped apples3 T lemon juice1 t vanilla1/2 t. stevia extract2 T whole wheat flour1 t cinnamon1/4 t salt2/3 c apple juice unsweetenedTOPPING2 T melted butter3/4 t Stevia concentrate1/2 t cinnamon1 c rolled oats2/3 c chopped nuts (almonds)12 packets artificial sweetenerWHIPPED CREAM1/2 pt heavy whipping cream1/2 t vanilla1 packet artificial sweetener
Preheat oven to 350 degrees. Butter a 9 x 13: baking dish. Place the apples in a large mixing bowl. Stir in lemon juice. Mix the vanilla, stevia, flour, cinnamon and salt into apples. Pour the fruit juice into the bottom of the dish. Spoon in the apple mixture. Spread the topping over the apples so it is evenly distributed. Bake for 50 minutes to 1 hour. If the topping gets done before the apples, cover pan with foil the last 15 minutes of baking.
TOPPING
Combine melted butter with stevia in a bow. Mix in the oats, chopped almonds and artificial sweetener.
WHIPPED CREAM (optional)
Combine 1/2 pint heavy whipping cream, 1/2 t vanilla and 1 packet artificial sweetener in a bowl. Whip with electric mixer until fluffy.
