Applesauce Fiber One Muffins - with cranberries and almonds

Ingredients
Milk, 1%, 1 cupFiber One Cereal, 60 grams, groundEgg, fresh, 2 largeButter, unsalted, 0.25 cup, melted and cooledCraisins, chopped, 60 gramsAlmonds, toasted, chopped, 60 gramsApplesauce, sweetened, 1 cupGranulated Sugar, 0.75 cupFlour, white, 1.25 cupFlax Seed Meal (ground flax), .25 cupBaking Powder, 3 tsp
Directions
Heat oven to 375'F. Grind Fiber One into flour and mix with 1cup milk and 1 cup applesauce. Set aside for 5 minutes. Add in eggs, butter, sugar (reserve 2 tsp in a small dish and mix with cinnamon). Mix in dry ingredients, then fold in craisins and almonds. Divide into muffin tins, top with cinnamon sugar, bake for 30(ish) minutes until a toothpick comes out clean.

    I used unsweetened applesauce and cut the sugar to 1/2 C and they were still great. I may try to cut the butter to 3 T next thime, just a thought. - 1/20/20
