Minestrone Tortellini

10 oz Tortellini (fresh or frozen)1/2 Tbsp Extra Virgin Olive Oil1/2 cup coarsely chopped Yellow Bell Pepper1 can (19 oz) Red Kidney Beans, drained, rinsed3 cups Diced Tomatoes, undrained2 Tbsp chili sauce (I used Frank's RedHot Original)2 Tbsp basil or parsley (calculated with basil)
1. Cook and drain tortellini as directed on package.
2. Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat. Add bell pepper; cook 2 to 3 minutes, stirring frequently, until crisp-tender.
3. Stir in beans, tomatoes, and chili sauce. Cook 4 to 5 minutes over medium heat, stirring occasionally, until thoroughly heated. Stir in tortellini. Sprinkle with basil or parsley.
4. Add some Parmesan cheese and serve. *cheese is not calculated

It was good but we felt like it was missing.....something. We couldn't quite figure out what.
Tried again... the first time i left out the hot sauce because I'm not a big fan of hot sauce. This time I put it in and it made a difference and it wasn't spicy, it just gave it flavor. - 9/28/10
