Aunt Peggy's Fruit Cake Muffins

2 1/3 cups Ginger Evans Biscuit & Baking Mix3 Tbsp. packed brown sugar1 Tbsp. Cinnamon1 tsp. Nutmeg1/2 tsp. Ginger2 Tbsp. Herbalife Protein Drink Mix1/2 cup coconut1/2 cup diced dried pineapple1/2 cup dried cranberries1 cup raisins2 Tbsp. Molasses2/3 cup water3 Tbsp. Vegetable Oil1/2 cup additional water (or substitute 1/2 milk and 1 tsp. vanilla and remove Herbalife Protein Drink Mix)
Pour Molasses over fruit. Add 2/3 cup water and let soak up to 3 hours.
Preheat oven to 400 degrees.
Combine all dry ingredients in a large bowl. Mix thoroughly.
Add oil into the additional 1/2 water. Pour oil/water into dry ingredients.
(Or add milk, vanilla and oil to dry ingredients separately)
Mix until dry ingredients are moist. You will have a ball of dough.
Add in the fruit and liquid it is soaking in. Mix until the fruit is well distributed into the dough.
Using 1/3 cup measure, scoop into 12 muffin cups.
Bake 17-20 minutes until toothpick comes out clean.
