Salmon w/Dijon Dill Sauce

4 6oz, salmon fillets, skin removed1T olive oil1-1/2T unsalted cold butter1 small shallot finely chopped1/2 c white wine1T Dijon mustard2T chopped dill (extra for garnish)1/8t pepper1 cuke, thinly sliced
Broil salmon on foil lined pan 7 - 10 min, till flaky
In med. saucepan over med-hi heat melt butter, add shallot, cook till softened (1 min.) Add wine and cook until reduced by half (3 min), Reduce heat to low, whisk in mustard, dill, pepper. Cut remaining butter into pieces and add to sauce. Whisk in.
Serve Salmon, spoon sauce, garnish w/dill. Cukes on the side.
