Cornbread, Southern Yellow

Ingredients
1/2 cup flour 1/2 cup yellow cornmeal1 tsp salt2 tsp baking powder1 eggenough milk to make a medium thickness batter
Directions
Approximately 8 servings. Use a small cast iron skillet, not large. You must use cast iron!

Oil skillet with olive oil, approximately 2 Tb (or to cover bottom of skillet). Preheat oven to 425F.

Mix flour, cornmeal (coarse grind), salt, baking powder, egg and enough milk to make a batter that flows smoothly when dripped from a spoon. Pour batter into the cast iron skillet and cook until done at 425F, approx. 30 minutes.

If you want to use a large cast iron skillet then increase flour to 1 cup and meal to 1 cup.

    I live in Canada and you can't get good cornbread this was great I just added alittle chopped roasted peppers and a tbsp of garlic hummus so it added 35 more calories - 10/18/10

    Thank you for a cornbread recipe that's not sweet. I have lived in the south all my life, I've eaten a lot of cornbread and I don't believe it should taste like cake. - 12/10/09
