Super healthy bran muffins

3/4 c unsweeted soy or almond milk1/2 tsp apple cider vinegar1 c plus 3 tbsp applesauce (unsweetened)1.5 c Arrowhead Mills Gluten Free All-Purpose Baking Mix3/4 c oat bran2 tsp baking powder1/2 tsp baking soda1.5 tsp cinnamondash of cloves, allspice, nutmeg to taste1/8 tsp saltDried fruit and nuts as you wish. I used:1/4 c craisins1 oz walnuts, chopped6 dried apricots, chopped1 small apple, chopped (unpeeled)1 tbsp chia seeds
Whisk soy milk with apple cider vinegar, let curdle 1 minute.
Add applesauce, whisk
In a separate bowl, sift flour, oat bran, baking powder, baking soda, cinnamon, spices, fruit and nuts
Fold dry into wet
Bake at 350 degrees for 25-30 minutes depending on what size muffin tins you use. I made two mini muffins tins and one normal-size tin, which would equal about 20 medium-sized muffins.
