Gluten-free Bread Machine Recipe

Ingredients

* 3 large Eggs, fresh * 1/4 cup Canola Oil * 1 cup Rice flour, brown *1 cup Rice flour, white * 1/2 cup Potato flour * 3.5 tsp Xanthan gum * 1/4 Granulated Sugar, .25 cup * 1 tsp Salt * 1 ounce Yeast, bakers * 3/4 cup Soy Milk Plain Light * 1/2 cup Buttermilk, lowfat
Makes about 12 slices.
Make sure milk is at room temperature. (Heat slightly to do this)
Mix all liquid ingredients together and pour into breadmaker. Mix all dry ingredients, except yeast together and place over top of liquid ingredients. Sprinkle yease over dry ingredients. avoiding the sides of the pan.
Set breadmaker to LIGHT. Press start. Let bread cool in pan.
Tastes like sourdough. Very dense and filling.
Note: I used a mixture of 1 cup each brown & white rice flour. 2 Cups of Brown rice fours can be substituted.
