Open-Faced Egg and Tomato Sandwich

Ingredients
1 Whole wheat English muffin, toasted2 large eggs2 slices tomato of a large tomato1oz low fat cheddar cheese, grated
Directions
In a non-stick pan, fry the eggs to your liking
Toast the English muffin
Slice tomato
Grate cheese

Place a slice of tomato on each half of the bun.
On top of the tomato add one egg, then top with grated cheese.
Microwave for about 15 seconds to melt the cheese.

For extra spice, top with a little hot sauce.
