Pumpkin Mousse

Ingredients
2 cups canned pumpkin1 tbsp. honey2 tsp. vanilla extract2 tsp grated lemon peel3/4 tsp cinnamon1 cup fat free ricotta cheese
Directions
1. In bowl, combine pumpkin, honey, cinnamon and lemon peel.
2. Mix well
3.Fold in ricotta cheese
Refrigerate 1 hr.
makes 6 - 1/2 cup servings
Add splenda to each serving as needed for desired sweetness
