Eggplant Parmesan

Ingredients
Peel 2 medium-size eggplantSlice about 3/4 inch thickPlace on paper towels and saltTurn and salt other sideDip in egg and bread crumbsSaute in olive oil until slightly tender (may need to add more oil)Spread a small amount of spaghetti sauce in the bottom of a baking dishLay eggplant in bottom of dishCover with spaghetti sauceLay slices of smoked mozerella on topCover with Parmesan cheese
Directions
Bake at 350 for 25 minutes, covered with foil

Remove foil and bake for 5 minutes uncovered till lightly brown on top
