Chicken Enchilada

Ingredients
2 lb boneless skinless chicken breast1 cup enchilada sauce1 cup chopped onion2 c. cheese12 8 inch flour tortillas
Directions
dice chicken breast into small squares, cook with onion and .25 cup of enchilada sauce.
Line bottom of 10x12 pan with a small amount of sauce, just enough to coat it.
In a tortilla place a small amount of enchilada sauce, some of the chicken mixture, some onions and some cheese. Place rolled tortilla in the pan, repeat until pan is full.
Spread the rest of the enchilada sauce evenly over the totillas, top with a little cheese, and any left over chicken and onions.
Bake in the oven at 350 for 15 minutes or until cheese is melted and the tortilla edges are browned.

    I made this and thought it was very good. I did variate a bit and added some diced tomatoes and green chilis.
