carrot, ginger and sweet potatoes soup

4 cups carrots, peeled and chopped4cups sweet potatoes, peeled and chopped1.5 cups onions chopped2 cups rice milk8 cups vegetable broth0.25 orange juice1 tbsp olive oil3 cloves garlic, minced1.5 tsp ginger root, freshly grated1tbsp dried rosemary
Add olive oil to pan and heat. Add onions and garlic and cook until softened.
Add carrots, sweet potatoes, spices and broth. Simmer until veggies are soft.
Blend in small batches in blender or food processor until desired consistency.
Add rice milk, orange juice and warm through. Do not boil. Serve warm in winter or cool in summer.
*Serve with sprinkle of parsley if desired.
**Freezes well. Makes 14-1 cup servings
