Ingredients
Beat together:1 c. egg substitute or egg whites3/4 c. granulated sugar1 29 oz. can pureed pumpkinStir in:2 c. whole wheat flour2 tsp. cinnamon1 tsp. baking powder1 tsp. salt1 tsp. baking soda1 c. chocolate chipsSpoon into 24 cupcake cups (either lined with paper cups or sprayed with cooking spray.) Bake at 350 degrees for 25 minutes, or until a knife inserted in the center of the cupcakes comes out clean.
