Mini Puff Pancakes

Ingredients
1 cup of milk1 cup of white flour3 eggs3 egg whites1/4 cup melted butterdash of salt
Directions
Preheat oven to 400 degrees.

Blend all the ingredients in a blender - scrape the sides once to make sure all is incorporated. Then grease your muffin tins (I spray with Baker's Secret - works great).

Bake them for 15 minutes - they should be puffy and golden brown. You must serve IMMEDIATELY as they begin to fall as they cool off.

Serving Suggestions: Powdered sugar with lemon wedges for squeezing, preserves, warm berries or just plain ol' maple syrup.
