Apple Loaf

Ingredients
2 c. white flour1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1/2 c. chopped walnuts1/2 c. margarine1 c. granulated sugar2 large eggs1 tsp. vanilla1 c. apples (aprox. 2 large) peeled, cored and shredded1/8 c. apple juice (or more if needed)
Directions
Preheat the oven to 350 F. Grease one 9x5x3 loaf pan.

Mix the flour, baking powder, baking soda, salt, and nuts. Set aside.

In a large bowl beat the margarine, sugar, and eggs (one at a time). Stir in the vanilla and apples. Add the dry ingredients and the juice, and stir until just moistened.

Bake for 50-60 minutes. Let cake stand in pan for 10 minutes, before removing to wire rack to cool.

    This was very tasty and moist, and one of the best fruit loaves I've eaten in a while. The only (very small) nitpick I have is that the apple flavour was a little too subtle. - 4/9/10
