Chris's Light French Toast

Ingredients
1 large egg or 1/4 cup egg substitute1/2 cup skim milk4 slices light wheat breadnon-stick cooking spray
Directions
Spray a skillet or frying pan with non-stick cooking spray. Heat over medium heat. In medium bowl, whisk together egg (or egg sub.) and milk. Dip a slice of the bread in the egg mixture, flip to coat both sides. Place in hot pan and cook for about 3 to 4 minutes. Flip and cook other side til golden brown. Remove to serving plate. Repeat with other 3 slices, placing 2 slices on each plate. Top with some butter & maple syrup or applesauce if desired. Makes 2 (2 slice) servings.
