Ingredients:*Whole Wheat Flour, 2 cup Baking Soda, 1 tsp Baking Powder, 1 tsp Cinnamon, ground, 1 tsp *Pumpkin Pie spice, 1.5 tbsp Brown Sugar, 0.5 cup, packed Yogurt, plain, low fat, 0.5 cup (8 fl oz) *western family vegtable oil, 1 tbsp egg white, fresh, 2 large Pumpkin, canned, without salt, 1 cup Vanilla Extract, 1 tsp*Pumpkin Pie spice, 1.5 tbsp
Mix flour, baking soda, baking powder, cinnamon, and pumpkin pie spice in one bowl.
In another bowl, combine all wet ingredients: brown sugar, yogurt, oil, egg whites, pumpkin, and vanilla extract.
Combine the wet with the dry and drop onto cookie pan sprayed with Pam.
Bake at 350 for 10-12 minutes.
Another good substitution is to add chocolate chips.
