Cinnamon Apple Cranberry Sauce

Ingredients
2 cups diet cranberry juice1 (6-ounce) bag sweetened dried cranberries1 cinnamon stick (broken in half) or cinnamon1 cup Splenda2 Gala apples, peeled, cored, and diced2 teaspoons corn starch
Directions
In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon, and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.

Remove 8 ounces of the liquid to a small bowl and whis in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.

Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Romve the cinnamon sticks and serve.

    I doubled the Cranberrys, used 2/3 Cup of Splenda, 3 Red Delicious Apples instead of the Gala Apples, and used 6 tsp of Cornstarch. It went over GREAT at the Church Dinner!! Even small Children were asking for 2nds!! No Leftovers To Bring Home!!! - 11/21/12

    I think the measurement for the corn starch must be off, because the sauce didn't thicken up very much, and I ended up with closer to 2 tablespoons of corn starch for the amount of liquid. Overall the flavor was good, but I would cut the liquid back to 1C to avoid adding so much cornstarch. - 12/25/10
