Apricot & Walnut Balls

80g dried apricots80g walnuts1t vanilla essenceOptional - 1T raw cacao powderOptional - 1T dessicated coconut
This is the easiest recipe I've ever invented, yet it doesn't compromise on taste! No need to add sweetener - the tang of the apricots is plenty for even the most die-hard sweet-tooth!
Combine all ingredients in a blender. (Optional - for a chocolaty twist, add cacao powder here)
Blend.
Roll mixture until balls using hands. (Optional - roll balls in coconut for a snowy finish).
Chill until needed.
Makes 12 teaspoon-sized balls. Perfect for a light dessert.
