Red Curry Pork

Ingredients
1.5 lb of pork loin chops, thin cut1 T ginger root, chopped2 T garlic, minced2 T fish sauce1 t tumeric1 tsp red pepper flake2 T red curry paste1 T sugar2 T lime juice1 T olive oil1 12-14oz can lite coconut milk
Directions
Warm oil in skillet. Add red curry paste and stir fry 10 seconds. Add pork and cook until no longer pink. Remove pork to bowl and set aside. Add ginger, garlic and tumeric to pan and stir fry 15 seconds. Add coconut milk, fish sauce, sugar and lime juice. Bring to a boil and simmer 5 min. Add pork back to skillet and cook additional 3 min. Serve over bulgar or rice. (not included in calorie calculation)
