Raw Potato Pancakes

Ingredients
*Potato, raw, 1 1/2 cup gratedOnions, raw, 1 teaspoon gratedEgg, fresh, 2 large well beaten*Flour, white, 1/4 cup Baking Powder, 1/2 tsp Salt, 1 tsp Pepper, black, 1 dash *Extra Light Olive Oil, 1 tbsp (just enough to cook the pancakes in)
Directions
Combine the potatoes, onion and eggs. Add 1/4 cup flour, baking powder, salt and pepper and mix well. Heat a small amount of oil in heavy frying pan. Drop pancake mix by tablespoon into pan. Cook until golden-brown on each side.

Makes 24 small pancakes (6 servings).
