1/3 cup + 1 tbsp corn starch1/2 cup sugar1 cup splenda1.5 cups water4 egg yolks1 tbsp smart balance1 tbsp grated lemon peel1/2 cup lemon juice
See pie shell recipe. Preheat oven to 400F.
Prepare to mix meringue as soon as filling is done by getting mixer ready and putting egg whites in appropriate bowl.
Put egg yolks into small heat proof bowl. In a medium sauce pan mix sugar and corn starch. Stir in water gradually. Cook over medium high heat, stirring constantly until mixture boils and thickens. Boil and stir 1 minute. Stir at least 1/2 of mixture gradually into egg yolks. Blend back into hot mixture in sauce pan. Boil and stir 1 minute. Remove from heat and stir in smart balance, lemon peel, lemon juice. Pour into pie shell.
