Ingredients
250-300gms.peeled and diced Potatoes50gms.ripe Tomatoes chopped fine 3-4medium hot Green Chillies slit lengthwise1tsp.Turmeric Powder1tsp.Red Chilli Powder1tsp.Coriander--Cumin Powder1tsp.Cumin Seeds1tsp.Asafoetida(Hing)PowderSalt to taste1"ginger Root minced fine3-4tbsps.chopped fresh Coriander(Cilantro)Leaves1tbsp.Sunflower Oil
Directions
Heat Oil in Non-Stick Wok.Lower flame and add Cumin Seeds,finely minced Ginger,Turmeric and Asafoetida Powders in the order mentioned. When the Seasoning sputters add finely chopped Tomatoes and slit Green Chillies. Saute till Tomatoes are soft and pulpy.Add Coriander--Cumin Powder and saute for 2-3 minutes more.Add Potatoes,Red Chilli Powder,Salt to taste with Water to form a gravy.Cover and cook on low flame till Potatoes are well done and slightly mushy.This should have a thin gravy.
Garnish with chopped Coriander(Cilantro)Leaves and serve hot with Indian Bread.
